Happy Thanksgiving from the Simply Studded Family

I realize that Thanksgiving is a day when family and friends gather together to celebrate and break bread.  But it is my hope that we do not forget the main purpose for the day…It is to give thanks to God for His blessings in our lives, for waking us up every morning and carrying us on our way.  For being there for us even when we don’t feel Him near. We have a lot to thank God for whether we are thanking Him for the modest blessings or the more grandiose blessings in our lives, He deserves thanks for them all. God is my everything, and I never cease to give Him thanks.

What are you thankful for today?

One thing that I am thankful for is LEFTOVERS! 🙂  The following days after Thanksgiving most people do not even want to think about cooking.  So my lovely people, I took it upon myself to find some gobble sandwich recipes for you to enjoy.  These all sound very delicious to me.  Try them out and tell me how your leftover experience went.

Turkey, Cranberry and Fontina Panini...Turkey, Fontina cheese, Cranberry Relish, Arugula Leaves, Olive Oil, and Whole-Grain Bread

Bistro Turkey Sandwich...Turkey Breast, Crumbled Gorgonzola Cheese, Pear, Basil Leaves, Red Onion, Boston Lettuce, Apple Cider, Cayenne Pepper, Dijon Mustard

Turkey with Salsa Verde and Rembrandt Cheese Sandwich… Turkey, Italian Salsa Verde, Chili Sauce, Yellow Bell Pepper, Onion, Rembrandt Cheese, Oregano Leaves, Olive Rosemary Bread

Hot Italian Turkey Sandwich… Turkey, Roasted Red Peppers, Sautéed Mushrooms and Onions, and Creamy Pesto Mayonnaise

Sloppy Joe…Not your “First Date” type of Sandwich

Have you ever just wanted some real comfort food?  Something that made you so comfortable that you didn’t have to worry about how you looked eating it?  Well my dear, I am pretty sure that you can agree that a nice messy Sloppy Joe can quench that craving.

A Sloppy Joe is definitely NOT your “first date” type of sandwich.  If you are trying to be cute and sweet on your first date, this sandwich should not be on the menu. But, maybe by the third date, you and that new eye candy can have a “lets make dinner together” date, and create your own mess…Sloppy Joe mess that is. 😉 Here’s how…

2 Tbl plus 2 Tsp Olive Oil
1 Cup Onion (diced small)
¼ Cup Celery (diced small)
¼ Cup Green Bell Pepper (diced small)
Course Salt and ground Pepper
2 Tsp Garlic (minced)
¾ Pounds Lean Ground Beef
1 ½ Tbl dark-brown Sugar
1 ½  Tbl Worcestershire Sauce
1 Cup Prepared Tomato Sauce
½ Cup Beef or Chicken Stock (low- sodium if possible)
1 Tsp Hot-Pepper Sauce (optional)
2 Hamburger Buns, Split

In a large skillet, heat 1 Tsp oil over medium-high.  Add onion, celery, bell pepper, season with salt and pepper, and cook until vegetables soften, about 2 minutes.  Add garlic and cook 1 minute.  Add beef, breaking up meat with a wooden spoon, and cook until browned, 2 minutes, add brown sugar, Worcestershire Sauce, tomato sauce, and stock and bring to a boil.  Reduce to a simmer and cook, stirring occasionally, 15 minutes.  Add hot-pepper sauce (if using) and remove beef mixture from heat.

Meanwhile, toast buns and brush with remaining oil.

Generously spoon beef mixture over toasted buns, and Enjoy that third date!

Mmm, take a bite out of that!
