Eggplant…Have it Your Way.

Growing up, I was not a fan of eggplants.  Theses day I find myself liking them more and more.  Now I am going to be honest, I would not say that I LOVE eggplants, but I have found ways to include them in my diet, and actually like them. Even when it comes to fashion, I see the term “Eggplant “ being used more and more  to describe something that is deep purple in color.

When picking or purchasing an eggplant, here are some things to look for…

–      The skin should be deep purple in color.

–      Firm to touch.  (Not too hard or too soft) and,

–      Caps and stems should be green.


  1. Plump, rounded eggplant tends to be juicier and better for baking and casseroles.
  2. Eggplants which are long and slender tend to be a little less juicy and better for frying.

Now that we have chosen a wonderful eggplant, it is time to cook and devour.  Here is one of my favorite eggplant recipes.

Eggplant Curry

Curried Eggplant and Potato

1 lb Eggplant Cubed (Peeled or Unpeeled)

2 Tbl Cooking Oil

½ Cup Onion Chopped

1 Tsp Garlic Minced

2 Tbl Curry Powder

1 ¼ Cups Water

8 oz Potato Cubed

Salt and Pepper to taste

Heat oil in a heavy pot, add onion and garlic and sauté for a few minutes.  Mix curry powder with ¼ cup water; add to oil and cook until thick stirring continuously.  Add potato and eggplant and stir until coated with curry.  Add 1 Cup hot water, salt and pepper, cover and cook on medium heat for 10 minutes.  Cook until water is reduced and mixture is tender and thick.

May be served with rice, roti, or parata.

    I happen to love eggplant paramigana! But I have not mastered making it yet. What’s a simple way to make this dish and it still taste good?

      Welcome and thank you so much for stopping by!

      I have found two Eggplant Parmigiana recipes that sound yummy delicious to me. But I have to tell you, that in any recipe that you ever make, remember to always season the food to your liking. (that is if you are making it for yourself) The world of taste is yours. In any recipe you are allowed to go against the rules and add or subtract anything to your liking. (except for times when you are trying to make a traditional dish the traditional way.) Here are two links to the recipes that you requested. I hope this helps.
