As I watch the weather channel tell me that it’s supposed to snow again tonight, my mind wants to take me on a esculent stay-cation. So I decide that I want to travel to a hotter place and take to the web for a great Hawaiian dessert. After searching for a while, I come across something that sounded so divine. .. “Polynesian Ambrosia”; the perfect mix of mandarin oranges, bananas, coconut, maraschino cherries, and pineapple juice. So now the challenge is to see if I have all of the ingredients in my kitchen. I mean I should have some things pre stocked for moments like this. It’s a simple recipe so I may just get away with this one. What makes this recipe even greater is that it takes all of 10 minutes to put it altogether. When I’m done, I sit in front of my TV and watch the travel channel and imagine that I’m on a beautiful beach in Hawaii eating my Polynesian Ambrosia and completely ignoring the snow right outside my window.

Polynesian Ambrosia
2 cans mandarin oranges, drained
2 bananas
3/4 c. flaked coconut
12 maraschino cherries
1/2 c. pineapple juice
Slice bananas and dip in juice of mandarin oranges (this keeps them from turning dark). Combine all ingredients and chill for at least 2 hours. Just before serving, toss lightly to blend fruit.
Mmm take a bite out of that!
